Abstract

8 bird-resistant sorghum cv. were evaluated at the milk, light dough, firm dough and mature stages of grain development. Polyphenolic activity as determined by several assays peaked at the dough stages and then dropped sharply at the mature stage. Group II sorghum cv. showed an earlier peak in polyphenol development and then a greater drop in levels in the ripened grain
