Abstract

The nutritive value of waxy (WS) and nonwaxy sorghum (NWS) protein was estimated with 8 subjects given wheat, beans and sorghum in 4 dietary treatments each for 6 days in a Latin-square design study. The nitrogen balance and protein digestibility of subjects on diets containing 30% WS or NWS were similar. Calcium and phosphorus balances were not affected by including WS and NWS. Subjects given WS ate and retained more thiamin and niacin but less vitamin B-6 than those given NWS; intake and retention of folate were not affected
