Abstract

Sorghum is deficient in lysine for humans. Normal and high-lysine sorghums were germinated for 1-10 days. Lysine content of germinated normal sorghum increased after 10 days from 2.2 to 3.2g/16g of nitrogen. For sprouted high-lysine sorghum, lysine content increased from 3.0 to 7.8g/16g of nitrogen after 7 days...
