Abstract

Quality characteristics of milled rice assessed since 1962 by the Chemistry Department of the International Rice Research Institute (IRRI) from samples grown in various countries are reported. Linear correlation coefficients indicated that amylose content was the major determinant of texture of cooked rice. It correlated negatively with gel consistency and cooked-rice Instron stickiness and positively with Amylograph viscosity valies and cooked-rice instron hardness...
