Abstract

The soluble proteins of grain of the low tannin cultivars IS4129 and IS3421 resolved into 17 and 16 bands respectively. Differences in position and number of bands were attributable to genetic variation between cultivars. No protein bands were detected in the grain of the high-tannin cultivars IS2825 or IS8202 unless the pericarp was removed, when 9-10 bands were observed. It is concluded that tannins in the pericarp affect the electrophoretic separation of proteins
