Abstract

2 jowar (Sorghum vulgare) var. (Type-4 and Type-8B), 2 barley var. (Clipper-two row and Vijya-six row) and an unspecified bajra (Pennisetum typhoideum) var. were assessed for relative amylase activity to investigate the suitability of coarse grains for malt and maltose preparation. Grains were analysed for moisture, ash, protein and starch then germinated after soaking in distilled water (control) and solutions of 0.5% calcium nitrate, 0.5% urea, 0.5% ammonium nitrate and 0.5 ppm gibberellic acid. Results are tabulated. For control grains, diastatic activity of bajra and jowar reached a max. value of about 170 Linter units after 32 h of germination. This activity then rapidly declined to practically nil at 72 h. Values for control grains of the barley var. were 62 and 102 respectively after 32 h. This activity continued to increase gradually up to 72 h. Gibberellic acid was found to slightly increase diastatic activity for all grains tested; calcium nitrate had little effect. No data are given for urea or ammonium nitrate effects on diastase activity
