Abstract
Factory-scale studies on sugar production from 'Rio' var. sweet sorghum (Sorghum bicolor) at the Melchor Ocampo sugar factory, Mexico are described. Tables of results are given for milling data, and for Brix, pol, apparent purity, starch, and aconitic acid concn. at various stages of the process. Results showed that sweet sorghum could successfully be milled in conventional cane milling tandems. Clarification successfully eliminated starch; aconitic acid could be separated by a batch crystallization process. Storage of the sorghum for 2 days before processing impaired juice quality. The prospects for commercial utilization of sweet sorghum are briefly considered
