Abstract

1. Sorghum, 15 varieties, grown in different parts of the Sudan contained in 100 g 366 to 394 kcal, moisture 5.7 to 10.5, protein 6.9 to 12.8, fat 3.0 to 4.1, carbohydrate 72.3 to 78.4, crude fibre 1.2 to 2.6, ash 1.3 to 1.8 and, in mg, Ca 13.8 to 44.0, Fe 0.6 to 1.5, P 121 to 363, thiamin 0.23 to 0.43, riboflavin 0.06 to 0.12 and niacin 3.3 to 6.1. Variations in protein and Ca contents between varieties were wide and could be of dietetic importance
