Abstract

Sorghum grain from the same source was dry ground, steam-flaked, reconstituted to 30% moisture, stored for 21 days and then ground, or was micronized in infrared heat for 2 to 3 min and lightly rolled. The reconstituted grain had significantly less total and ethanol-soluble carbohydrates than the other forms. The 2 heat process increased ethanol-soluble carbohydrates. There were differences among the forms in the solubilities of carbohydrates and of starch in rumen fluid or 0.1 N HCl. Different physical states of the starch granules were confirmed by birefringence and viscosity. The micronized or steam-flaked starch granules were completely gelatinised. Differences were not considered sufficient to account for the difference in physiological response to the different forms of the grain. The solubilisation of the protein matrix is discussed
