Abstract
The contents of lysine, threonine, sulphur amino acids and tryptophan in ragi (Eleusine coracana), jowar (Sorghum vulgare) and cowpea (Vigna sinensis) were estimated microbiologically as also their chemical scores by reference to egg protein and to FAO reference pattern for children. Ragi and sorghum had chemical scores of 50 and 48 relative to egg protein and 59 and 59 by the FAO standard. The corresponding values for cowpea were 33 and 51. Protein efficiency ratios (PER) for ragi and sorghum given to rats at the 6% level were 1.29 and 2.05 but were 2.14 and 2.84 when the 2 proteins were mixed, respectively, at 3:1 and 1:1. Given at the 10% level PER of sorghum and cowpea were 1.09 and 2.18 increasing to 1.79 and 2.16 at the ratios of 3:1 and 1:1, order as above. There was no correlation between chemical score and PER
