Abstract

The nutritive value of maize and sorghum, cultivated extensively for human consumption in India, is reviewed, with particular reference to their nicotinic acid content and amino acid composition and the incidence of pelagra associated with consumption of diets largely composed of either of these cereals. The effect of preparation and alkali treatment on the nicotinic acid is also considered
