Components of nutritional quality in grain sorghum

Abstract

Average protein and amino acid composition of 522 lines from the world sorghum collection is tabulated. Content of protein averaged 12.6%, lysine 2.1%, methionine 1.8%, cystine 1.5% and tryptophan 1.3%. Results of fractionating whole grain from (i) 2 low-tannin and (ii) 2 high-tannin lines into 5 different solubility fractions according to the procedure of Landry & Moureaux [see Bulletin de la Societe de Chimie Biologique (1970) 52, 1021] showed distinct differences in protein distribution in various fractions, suggesting that the presence of tannins altered the solubility of sorghum proteins, perhaps by binding or forming complexes with the protein. In fraction I of (ii) the protein content was very low, in (i) the protein content of fractions II and III was high but lysine content very low. In endosperm fractions differences in protein content in (i) and (ii) were less pronounced. Of 472 lines analysed for amino acid content, 300 were classified as (i) and 172 as (ii); average catechin equivalent values (CEV) were 0.38 and 3.40, respectively. Of 288 lines collected in Cameroon, 80% were classified as (ii), CEV 4.07. Low-tannin sorghums should preferably be used for food; dehulling procedures or dry milling methods could remove pericarp and testa cells containing tannin compounds, and additives could perhaps preferentially bind with tannins to allow protein to be utilized. Prolamin content, germ size, and tannin content should be studied in order to improve the nutritive quality of sorghum
