Abstract
The crude protein content did not substantially alter during the grain formation, but the level of lysine and tryptophan gradually decreased and that of leucine, increased with the maturity of grain. However, the level of methionine was not much affected at the early-milky and mature stages, though it increased at the mid-milky stage. It was found that albumin and globalin fractions constituted the major proteins are the pre-mature stage, whereas these got altered and prolamine and glutelin became predominant at the mature stage of grain formation. The present study suggests that the protein quality of premature Sorghum grain is better than that of mature grain
