Abstract
Both the protein nutritive value and the antitryptic activity of soybeans and chickpeas decreased significantly (those of the former to much greater extent) during storage under controlled conditions of temperature and relative humidity, and in the presence or absence of air access. A possible explanation for the fact that the decrease of anittryptic activity was not accompanied by a corresponding increase in protein nutritive value - rather the opposite - is discussed.
