Abstract
Milled fractions of 12 millet (Eleusine coracana) varieties were analysed. The refined flour contained protein 3.2-5.9, fat 0.2-0.6, carbohydrate 92.4-95.8, crude fibre 0.8-1.7 and ash 0.5-1.0%. The shorts and husk fractions were richer in protein, crude fibre, fat and ash than the refined flour. The varieties containing more protein did not necessarily yield flour with a higher protein content
