Abstract
The high-lysine types P721 opaque (a chemically induced mutant) and IS11758 (an Ethiopian variety) contained more salt-soluble and alcohol-insoluble reduced glutelins and less alcohol-soluble proteins, kafirin and alcohol-soluble reduced glutelin than did the normal types P721+, from which P721 opaque originated, and TE77. Electrophoretic patterns of kafirins and alcohol-soluble reduced glutelins were similar for P721 opaque and P721+ but differed between unrelated varieties
