Abstract

Moisture and Kernel damage are the two important physical criteria and the biochemical changes to be considered as standards for grain Sorghum. There is significant relationship between the physical criteria and the biochemical changes occurring in sorghum grain. Moisture can be correlated with free fatty acids, fungi and apparent uric acid. The result also indicated a high correlation between fungi and apparent uric acid like substances which are positive to Benedict’s reaction complex.
