Abstract
Since gram (Cicer arietinwri) and ragi (Eleusine coracana [Eleusine indica]) are extensively used as major articles of diet, in the form of flour and bread, by poor people of the Province of Bihar, India, an investigation of their nutritional value in respect of essential amino-acids was made. The amino-acids tryptophan, lysine, phenylalanine, threonine, arginine and histidine were estimated microbiologically, with Lactobacillus arabinosus for tryptophan, Leuconostoc mesenteroides for lysine, histidine and phenylalanine and Streptococcus faecalis R for arginine and threonine. All the amino-acids, with the exception of threonine, which was absent from both gram and ragi, were found to occur' in quantities sufficient to make gram and ragi useful staple foods. G. A. Garton.
