Abstract

The protease activity of grain sorghum as affected by cv. or reconstitution with water or propionic acid was determined. Smaller grain cv. Redlan Waxy had higher protease activity than the larger grain cv. Redlan Nonwaxy. Protease activity was highest in dry grain, declined during anaerobic reconstitution and with 2% w/w propionic acid, and increased during aerobic reconstitution
