Abstract

Eight phenolic acids and 12 unknown compounds were detected in grain extracts; profiles of the seven varieties analysed are given. Those resistant to fungal attack contained a greater variety and larger amounts of phenolic acids and other compounds and had more of their total phenolic acids in the free form than susceptible varieties
