Abstract

In an investigation of the amino acid composition and protein solubility of 8 sorghum cv. and high lysine opaque-2 maize, the local sorghum cv. Giza 114 had relatively high lysine, tryptophan and methionine contents. Protein solubility tests on this cv. also showed high total soluble protein and glutelin contents (40.76 and 17.60% of total protein, resp.). Opaque-2 maize was characterized by a high lysine content and total soluble protein and glutelin contents of 90.21 and 52.90%, resp. The isoleucine:leucine ratio differed little between sorghum cv. and between sorghum and opaque-2 maize
