Abstract

(a) Sorghum, (b) Pennisetum typhoideum [P. americanum], (c) Setaria italica, (d) Eleusine coracana, (e) Echinochloa colonum, (f) Panicum miliaceum, (g) Paspalum scrobiculatum and (h) Panicum miliare were screened for inhibitory activity against human salivary amylase. No activity was detectable in (e), (f), (g) or (h); 2 strains of (a) and 1 of (b) showed no alpha -amylase inhibitory activity. All other seeds had activity, the highest being observed in (a). The inhibitor from (c) did not affect human, bovine or porcine pancreatic amylases; that from (a) did not act on bovine or porcine pancreatic amylase. Extracts of (b) and (d) inhibited all 4 alpha -amylases. The inhibitors were non-dialysable and were inactivated by pepsin treatment; those from (a) and (c) were more thermolabile than those from (d) and (b)
