Abstract
In the present study four formulations of instant mixes were prepared from foxtail millet semolina and garden cress semolina with spice mix and oil and were evaluated and compared for sensory characteristics and proximate composition with wheat semolina. Results of sensory evaluation showed that replacement of wheat semolina with mix prepared by foxtail millet semolina and garden cress semolina in the proportion of 75:10 was found to well accepted. The proximate composition of instant upma mix showed that moisture content varied from 6.15 to 7.62%, protein content 11.30 to 13.84%, fat 7.30 to 16.80%, fiber 3.90 to 4.31% ash 2.89 to 4.43%, carbohydrate content 55.16 to 64.07% and energy value 371.06 to 427.50 kcal/100g.
