Abstract
The improvement of kernel flavor and texture is a primary objective of the entire peanut industry. It is particularly important to the segment concerned with Virginia type peanuts. Each year approximately 200 million pounds of raw peanuts are salted and 150 million pounds are used in candies. About 72% of the salted nuts and 30% of those in candies are Virginia type. Since the nuts are processed for human consumption, flavor and texture may significantly affect market demand.
