Abstract
17. Rabbits weighing 1.5 to 2 kg were given a diet with 2% cholesterol and 6% oil which was refined groundnut oil prepared by a long series of treatments including alkali washing, decolorization and steam treatment, cold-pressed groundnut oil prepared by pressing and filtration only or maize oil. Both types of groundnut oil had the same atherogenic potential and were about 20% more atherogenic than maize oil. Cold-pressed groundnut oil was 5% less atherogenic than refined groundnut oil. The differences between maize and groundnut oil could not be attributed to differences in phytosterol or free fatty acid content
