Abstract

Vanaspati, hydrogenated vegetable oil, is the only fat used in the diet of Indian service personnel and published data suggest that it may not provide enough polyunsaturated fatty acid. Refined groundnut oil fortified with vitamin A 700 IU/oz was found to be suitable for replacing the vanaspati. It was fairly stable even under extreme climatic conditions in different military storage depots. Physico-chemical changes in the 2 fats were similar at normal frying temperatures
