Abstract
Figeonpea is one of the major food legumes grown and consumed extensively In the Indian subcontinent. It is consumed mostly in the form of dhal or dehusked splits, as dehusking reduces the fibre content and improves the appearance, texture, cooking quality, palatability, and digestibility of the grain. It provides a necessary protein supplement to the largely cereal based diet of Indian population. Dehusking is an age old practice which probably developed in the kitchen and later developed through village level operations into a large scale organized industry (Kurien and Farpia, 1968). There are now over 10000 milling units of varying capacities for processing the annual Indian pigeonpea production of about 2 million tonnes (Kurien 1980). Dhal recovery in commercial pigeonpea dhal mills has been reported by Singh and Jambunathan (1980) in the range of 68-71 percent, which indlcate the milling losses to the tune of 29-32 percent. Must of the commercial dhal mills still use the scaled up adaptations of traditional household technology and continues will be significant reductian in milling losses.....
