Abstract

An investigation was designed to study the adequacy of protein in five different diets, composed of foods that are typical of a Middle Eastern diet with protein sources and ratios similar to the average consumption there, and also to study the isonitrogenous replacement of sesame meal by non-fat dried milk or whey delactosed and demineralized by reverse Osmosis, and substitution of cereals for chickpea.
